Place 4 tablespoons butter in a microwave-safe bowl and heat for 10-20 seconds, or until melted.

Ingredients for Smoked Mac & Cheese:

  • Elbow Noodles, 16 oz. / 1 lb.
  • 8 tbsp. / 1 stick – butter
  • Flour, 4 Tablespoons
  • Mustard Powder (1 Tablespoon)
  • 2 CUP HALF AND HALFTIME
  • Cream Cheese (5 oz.)
  • Mild Cheddar – 16 Ounces / 2 Packages
  • Muenster Cheese, 8 oz.
  • Cast Iron Skillet, 12″

To begin, bring a saucepan of water to a boil. When the water is boiling, add the elbow noodles. The noodles should be cooked 95% of the way through, with a little crunch left over, but not completely done since they will continue to cook on the Big Green Egg (or smoker of choice).

It normally takes 7-8 minutes to do this task. Remove the noodles from the heat and keep them aside for later.

Melt a whole stick of butter in a cast iron pan (8 Tablespoons).

I also suggest using a cast iron pan for this cook since it properly distributes the heat. It also eliminates dishes by allowing you to prepare everything in one pan that can be transferred directly to the Big Green Egg (or any other smoker).

Mix in 4 Tablespoons of flour right away.

After the flour has been well combined, add the Tablespoon (1) of powdered mustard powder and stir well.

  3. Combine all of the ingredients in a large mixing bowl and put away for later.

Macaroni & Cheese

  1. Boil water in a saucepan and cook the noodles until they are approximately 95 percent done. You’ll want them to still have a little crunch when you serve them (roughly 7-8 minutes). Remove the meat, drain it, and put it aside.
  2. Melt a whole stick of butter in a cast iron pan over low heat.
  3. Combine the flour and ground mustard in a mixing bowl.
  4. Stir in the half-and-half until well combined.
  5. Continue to whisk in the cream cheese until you have a smooth, uniform sauce.
  6. One by one, add and stir in all of the cheese.
  7. Stir in the macaroni elbows with the cheese mixture.
  8. Level off the top of the Macaroni & Cheese and add the Panko mixture creating an even layer on the top.
  9. Get the BGE dialed into 225 degrees for an indirect cook. Place the Macaroni & Cheese on the grate and cook for 45 minutes to an hour and a half. Pull and enjoy!

Do you want a bit extra smokiness? To add a bit additional taste, try adding apple wood.
