  • Milk, 3/4 cup
  • 1 CUP CHEDDAR CHEESE, SHREDDED

It’s time to start smoking the Mini Cheddar Meatloaves after the Big Green Egg has reached 350 degrees. With the plate setter / conv”egg”tor, this is an indirect cook.

Simply place the Skillet made of cast iron on the Big Green Egg and throw a couple probes in to monitor the temperature. This cook should take roughly 45 minutes, uncovered.

  • Ground Beef, 1 pound
  • a third of a cup of ketchup
  • 1/2 CUP – LIGHT BROWN SUGAR, PACKED
  • Mustard (1 1/2 teaspoon)
  • Skillet made of cast iron

Instructions

  1. In a large mixing basin, whisk together the egg and milk.
  2. Toss in the cheese with the beaten milk and egg.
  3. Stir in the oats until they are evenly distributed throughout the mixture.
  4. Cow Lick Seasoning should be added now (optional).
  5. Mix in the meat well.
  6. Make about 8 equal balls per pound and place in Skillet made of cast iron.
  7. To make the ideal topping, combine the ketchup, mustard, and brown sugar in a small bowl and equally pour over the tops of the tiny meatloaves.
  8. With the BGE dialed into 350 for an indirect cook place the Skillet made of cast iron in the BGE.
  9. Cook for 45 minutes, then check that the minimum temperature meets USDA beef criteria.

Notes

Dizzy Pig’s Cow Lick is optional, but it adds a little additional taste to the Mini Cheddar Meatloaves.
