- 1 yellow onion (or 1/4 cup minced onion) for each person
- Taco Seasoning (one packet)
- a third of a cup of water
- 1 Can – Southwest Corn with Poblano & Red Peppers (Drained)
- Fiesta Nacho Cheese Soup (in a can)
- 1 pound of Tater Tots
On the BGE, make Smoked Tater Tot Taco Casserole
Begin by lighting the Big Green Egg. The plate setter / conv”egg”tor is put with the feet pointing upward in this indirect cook.
Set the BGE to roughly 350 degrees Fahrenheit.
Combine the ground meat and onion in a skillet.
Cook until the ground meat is well cooked.
Make sure to drain all of the extra fat from the skillet after it’s finished.
Toss the ground meat and onion with a little water.
Add the taco seasoning package.

Instructions
- In a pan, combine the ground beef and the sliced / diced yellow onion. Drain the fat after browning the ground meat.
- Combine the water and taco seasoning packet in a mixing bowl. Cook for approximately 5 minutes, uncovered.
- Fill a 9×11″ baking pan halfway with taco seasoned ground meat.
- Add the corn & fiesta nacho cheese soup then mix together well. Create an even layer on the bottom of the 9×11″ pan.
- Make a uniform layer of tater tots on top.
- Place on the Big Green Egg and smoke for 35-45 minutes, or until the tater tots are done, at 350 degrees.
- Remove the smoked tater tot taco casserole from the oven, dish it, and eat it.
Notes
Corn from a can may be used instead.
For extra taste, diced green and red peppers may be used.
