Smoked Brisket Mac & Cheese Toppings

  • 4 tblsp. melted butter (Half a Stick)
  • 1 cup bread crumbs (panko)
  • 1 Tablespoon – Dizzy Pig Cow Lick Rub (other rubs would probably suffice, but this is preferred)

  • Cellentani Noodles, 16 oz (elbows would also work)
  • Butter (eight tablespoons) (Full Stick)
  • Flour, 4 Tablespoons
  • 2-4 Cups — Brisket Leftovers (this recipe I used 2, but if you prefer a more meaty mac and cheese use 4)
  • 1 Tablespoon Mustard Powder (Ground)
  • 2 CUP HALF AND HALFTIME
  • Cream Cheese (5 oz.)
  • Shredded Cheddar Cheese, 8 oz.
  • Muenster Cheese (8 oz.)
  • Gouda Cheese (8 oz.)

To begin, melt half a stick of butter in a mixing dish and add the Panko Bread Crumbs.

Boil/cook the noodles in a big saucepan, then drain and put aside.

Melt a stick of butter in a sauce pan. Combine the flour and ground mustard powder in a mixing bowl.

Combine the half-and-half and cream cheese in a mixing bowl. Allow the cream cheese to melt into the sauce after chopping it up.

While the Muenster Cheese is melting, stir it in.

  1. Boil water in a saucepan and cook the noodles until they are approximately 95 percent done. Remove the meat, drain it, and put it aside.
  2. Melt a whole stick of butter in a sauce pan.
  3. Combine the flour and ground mustard powder in a mixing bowl.
  4. Stir in the half-and-half until well combined.
  5. Continue to whisk in the cream cheese until you have a smooth, uniform sauce.
  6. Add and mix in the Muenster & then the Gouda cheese. Continue to mix while it melts.
  7. Once complete, add the Brisket, noodles & Cheese sauce to a large dutch oven. Mix everything together well.
  8. Create a uniform layer of shredded cheddar cheese on the top.
  9. Grab the Mac & Cheese toppings that were set aside and add it to the top.
  10. Get the Big Green Egg dialed in right around 225 degrees with indirect heat and then add the Smoked Brisket Mac & Cheese.
  11. After about 45 minutes the Smoked Brisket Mac & Cheese is ready to be pulled and served. Enjoy!
