Brush a very little quantity of extra virgin olive oil onto the dough to make a uniform, thin coating.

Lightly season the extra virgin olive oil with your preferred pizza crust spice (we prefer Silica).

To avoid breaking, make sure the stone warms up and cools down with the BGE. You’ll also want to make sure you have a pizza stone that’s extremely thick, like this one (amazon link).

The Margherita Pizza is baked for 8-10 minutes at 500 degrees. Turn the pizza 45 degrees and remove the parchment paper halfway through the cooking time.

Remove the Margherita pizza from the oven and set it on a cutting board after the crust is done to your preference. Slice it up, serve, and savor it!

Instructions

  1. Start the Big Green Egg and set the temperature to roughly 500 degrees. To prevent the pizza stone from fracturing, use the BGE to heat and cool it while it is warming up. The pizza stone should be put on top of the plate setting, with the feet pointing upward.
  2. Puree the peeled tomato in a food processor or blender, then transfer to a mixing dish. Garlic, minced, and freshly grated black pepper, to taste. Set aside after thoroughly mixing everything together.
  3. Cut 4 Tomatoes in Grapes in half and set aside.
  4. Set aside the Mozzarella cubes, which have been cut into 1″ cubes.
  5. To keep the pizza dough from sticking to the pizza peel, roll it out and set it on parchment paper.
  6. Brush on a little amount of extra virgin olive oil to form a thin coat. Season the pizza dough with salt and pepper.
  7. Next spread a thin layer of the pureed tomato sauce, add 6-7 Tomatoes in Grapes, the mozzarella cheese and basil leaves.
  8. Cook for about 4 minutes on the Big Green Egg. Turn the pizza 90 degrees and remove the parchment paper from beneath it using the pizza peel.
  9. Cook until the dough is cooked to your satisfaction. Remove from the oven, slice, dish, and enjoy!
