Start the Big Green Egg.
Set the temperature on the Big Green Egg to roughly 300-325 degrees. The best way to cook this is over direct fire on the grate. It’s a good time to get the chicken ready while this is dialing in.
Stuffed Chicken for the Big Green Egg: How to Make It
To prevent toothpicks from igniting during the frying process, soak them in a cup of water. For each piece of chicken, two or three toothpicks should enough.
Start out by creating a “pocket” in the Breast of chicken. This is easily done by taking a pairing knife and basically cutting the chicken in half leaving the one side attached.
Fill the Breast of chicken with what ever sounds good to the taste buds. For this particular cook we cut up a few pieces of ham and added some Mozzarella and Blended Italian Cheese which turned out fantastic.
Once complete simply close the Breast of chicken back up.
Sprinkle some Dizzy Pig’s Shakin’ the Tree on the outside. If you like more of a bold taste also put some one the inside of the breast.
Repeat with the other side of the chicken. Take the teeth picks and put them at a 45 degree angle through both breasts at this period. This will retain the contents of the chicken within the bird as it cooks.
Place the chicken on the grate immediately.
Add your meat probes to keep an eye on the temperature without having to open the package and test it with a thermometer.
Allow the chicken to cook until it reaches 150 degrees before opening the cover and flipping it. This will also add some color on the opposite side.
Cook the chicken until it reaches an internal temperature of 165 degrees. The safe internal temperature for chicken is 165 degrees Fahrenheit, according to the USDA. Pull the chicken and enjoy after you’ve reached this point.
