  • 1 tblsp. melted butter
  • Onion, red
  • Mushrooms
  • Cheese from Switzerland
  • Breasts of chicken
  • Bell Pepper, Red
  • 1 Tablespoon – Olive Oil Extra Virgin
  • Dressing made in Italy (Olive Garden is preferred)

Instructions

  1. Place the Breasts of chicken in a bowl, add the Olive Garden Dressing and place in the fridge to marinate up to 6 hours.
  2. Slice the Bell Pepper, Red, Onion & Mushrooms. Place in sauce pan and add 1/2 a Tablespoon of butter, 1 Tablespoon of Olive Oil Extra Virgin and set aside.
  3. Start the Big Green Egg and adjust the temperature to 450°F to 500°F using a direct heat setting.
  4. Once the chicken is up to temperature, place it on the BGE and baste it with the remaining dressing every time it is turned.
  5. Turn the stovetop to medium heat and sauté the toppings while the chicken cooks.
  6. Seal the bottom and top vents once the chicken reaches an internal temperature of 165 degrees, add a slice of swish cheese to each chicken breast, and close the lid for a minute. When the cheese has melted, remove the chicken.
  7. Plate the chicken breast and serve with the sautéed toppings.
