Ingredients

  • 1 pound (90/10) lean ground beef
  • Colby Jack or Shredded Cheddar Cheese, 1 cup
  • 1/4 cup taco seasoning (1 packet)
  • 1/4 cup onion, diced
  • Salsa, 5 Tablespoons (mild or hot depending on the guests you are cooking for)
  • Fritos, 1 bag (Scoops)
  • 1 jalapeo (diced) for each person (Optional)
  • 1 tbsp. sour cream (Optional)
  • 1 guacamole per person (Optional)

Instructions

  1. In a mixing bowl combine the ground beef, cheese, taco seasoning, chopped onion & salsa (also add the optional jalapenos here). Mix all Ingredients together well.
  2. Spoon or fill meat taco mixture into Fritos and set on pan (covered with tin foil for easier cleaning).
  3. Cook at 350 degrees in an indirect platesetter / conve”egg”tor with the feet facing upward until the internal temperature of the flesh reaches 165 degrees.
  4. Topping these scrumptious filled Fritos with sour cream, guacamole, or both is a must.

Notes

If you don’t have a squirt bottle, put the sour cream / guacemole in a sandwich bag, snip the corner, and squeeze on top of the packed Fritos from south of the border.

If you use an 80/20 ground beef mix, the chips will turn mushy and soggy.

These are almost as tasty in the oven as they are on the Big Green Egg if you live in a northern state like me when it’s a blizzard out for the big game.
