Begin by prepping the vegetables.

You may split the tomatoes in half and then remove the top and bottom cores. Only a quarter of a red onion may be used once it has been chopped in half twice (quartered).

You may remove the top and bottom of the jalapeño before cutting it in half lengthwise. If you prefer your salsa with a little spice, you’re done and may discard the seeds. Remove the cores of the jalapenos if necessary.

  4. Cut the jalapeño in half lengthwise after removing the top and bottom. If you prefer your salsa spicy, leave the seeds in; if not, remove the cores.
  5. Place all of the vegetables on the BGE and smoke for an hour or two at 200-225 degrees until they are tender.
  6. Remove the tomatoes from the BGE and discard the skins (should easily peel right off). In a blender, combine all of the ingredients and mix until the salsa reaches the desired consistency. Toss in the chopped cilantro and adjust the amount to taste.

Notes

If you want your salsa hotter, add a second jalapeño pepper and discard the seeds.
