These crispy, smoky potatoes are a blast from the past. They’re also one of my favorite recipes for fall because they make use of many flavors that go well together—coarse sea salt, bacon fat and smoked paprika.

To melt the butter, either microwave it on “melt” mode or lay it on the Big Green Egg.

Later, on top of the butter, sprinkle the Parmesan cheese. While I like this dish as is, it is very tasty if you add additional spice, such as Dizzy Pig’s Cow Lick, at this stage (just if you are looking for something with a different flavor).

Get the Big Green Egg going and set the temperature to roughly 400 degrees. The platesetter / conve”egg”tor is placed with the feet pointing upward to cook these Parmesan red potatoes in an oblique manner.

Cook for 40-45 minutes, uncovered, at 400 degrees, or until the potatoes are cooked.

Notes

I’ve discovered that flavoring the Parmesan / Butter with Cow Lick by Dizzy Pig before putting the potatoes in works very well.
