How to Make Smoked Chicken Gyro Sandwiches
To begin, place the chicken in a freezer bag or dish and pour half of the Tzatziki sauce over it. Mix until all sides of the chicken are covered, then marinate for up to 4 hours in the refrigerator.
Slice the cucumber and cut it into half while the chicken marinates in the Tzatziki sauce. Set aside approximately a fourth of the red onion slices.
How to Make Chicken Gyro’s on the Big Green Egg (or Kamado Joe)
Set the temperature on the Big Green Egg or Kamado Joe to roughly 350-0375 degrees. Because this is an indirect cook, place the plate setter / conve”egg”tor on top of the grate with the feet pointing upward.
This approach involves cooking the chicken at a lower temperature to give some smoky flavor, but it works just as well when done directly. Remove the plate setter / convert”egg”tor if you’re cooking the chicken directly.
How to Make Smoked Chicken Gyro Sandwiches
Cook the chicken till it reaches an internal temperature of 140-145 degrees on the BGE or Kamado Joe.
When the chicken reaches 140-145 degrees Fahrenheit, turn it over to finish cooking.
The chicken is done when the internal temperature hits 165 degrees and is ready to be pulled.
Simply cut the smoked chicken into cubes after removing it from the BGE or Kamado Joe, as demonstrated here.
It’s now time to finish this delectable Smoked Chicken Gyro. In the Pita Pocket, arrange the chicken, cucumbers, and red onions in an equal layer.
Don’t forget to top it up with some Tzatziki sauce, and enjoy!
