While I generally prepare all of my morning items on the Blackstone Griddle, I decided it was time to try something new on the Big Green Egg. This delectable morning pizza on the BGE accomplishes the job, and it’s so wonderful that the kids asked for seconds!
We all like pizza on the BGE at our place. After experimenting with a few different recipes, this amazing morning pizza dish was born.
Ingredients for Big Green Egg Breakfast Pizza
- Bob Evans Ground Sausage, 1 package (Preferably zesty)
- 1 bacon package (Thick Cut Preferred)
- 6-7 eggs per person
- Milk, 2 tablespoons
- Delallo Pizza Dough Kit (one package) (Preferred)
- 1 package shredded cheese (preferred Pizza Blend)
- Fiesta Nacho Cheese or Regular Cheese, 1 can
- Diced green pepper (Optional)
- Diced red pepper (Optional)
- Diced yellow onion (Optional)
How to Make a Breakfast Pizza on a Big Green Egg
All of the Ingredients for this Big Green Egg breakfast pizza must be prepared beforehand. This dish has the advantage of being able to be cooked and prepared the day before, making breakfast that much simpler in the morning.
Brown the sausage first, then put it aside or store it in the refrigerator for the following day.
In a pan, pour a little extra virgin olive oil. This will aid in the rendering of the bacon fat and the prevention of it burning.
Cook the bacon in the pan, turning it as necessary.
Cut the bacon into 3-4 – 1′′ pieces on a chopping board. Refrigerate or set away for the morning.
In a mixing basin, crack the eggs.
To make scrambled eggs, add the milk and whisk together.
Cook the eggs in the same way as you would scrambled eggs. The only difference is that you want to pluck them a little earlier this time. The remainder will be cooked on the morning pizza on the Big Green Egg.
To keep the dough from sticking to the mat and roller, roll it out with a little flower.
On parchment paper, place the pizza dough. You may also add corn flour to keep it from adhering to the pizza peel, but I think that parchment paper is much simpler and cleaner.
A thin coating of fiesta nacho cheese sauce should be applied.
Place a thin layer of scrambled eggs on top.
Toss in the sausage.
Add the bacon and any other desired Ingredients (Bell Peppers, Onions, Ham, Mushrooms, etc.).
Top the morning pizza with shredded pizza mixed cheese to finish it off. It’s time to put it on the Big Green Egg to cook.
On the Big Green Egg, How to Make Breakfast Pizza
On the Big Green Egg, the morning pizza is cooked in an indirect manner. The platesetter / convertor must be positioned in the BGE with its feet pointing up. On top of it, place the pizza stone.
Make sure the pizza stone is inserted while the BGE is warming up and cooling down. The pizza stone will not fracture as a result of this precaution.
It’s time to put the morning pizza on the Big Green Egg after it’s reached about 500 degrees.
Rotate the morning pizza 90 degrees halfway through cooking, about the 4 minute mark. Remove the parchment paper while doing so.
Cook until the crust is done to your satisfaction (preferably lightly browned on the bottom). Place on a chopping board to cool.

Instructions
- If making the sausage ahead of time, brown it and put it aside or refrigerate it.
- Cook the bacon in a skillet with some extra virgin olive oil. Cut into 3-4 – 1″ pieces using a cutting board. If preparing the day ahead, set aside and/or refrigerate.
- In a mixing dish, crack the eggs, add the milk, whisk together, and cook like scrambled eggs. Remove the eggs while they are still somewhat runny, as they will continue cooking on the Big Green Egg’s breakfast pizza.
- Decorate the roller and baking mat with a flower. To avoid sticking, roll out the pizza dough and set it on parchment paper (corn meal works as well).
- On the dough, spread a thin layer of fiesta nacho cheese. Scramble the egg, add the sausage, bacon, and any additional ingredients you desire (bell peppers, onions, ham, mushrooms…). With shredded cheese on top, the morning pizza is ready for the BGE.
- Preheat the BGE to 500 degrees Fahrenheit. The foot of the plate setter / convert”egg”tor should face upward when installed. To avoid cracking, make sure the pizza stone warms up and cools along with the BGE.
- On the enormous green egg, place the morning pizza.
- Rotate and remove the parchment paper after 4 minutes. Cook until the crust is done to your satisfaction (preferably lightly browned on the bottom). Remove the crust, slice it, and serve this delectable morning pizza!
