These cheesy breakfast burritos on the Blackstone Griddle are really simple to prepare and the kids adore them. Repurposing the beautifully double smoked ham from the Big Green Egg is one of my favorite aspects of these morning burritos. It truly simply adds a little additional taste.
Ingredients for a Cheesy Breakfast Burrito on the Blackstone
- Chunks of ham
- Shells of Tortillas
- 8 – Eggs (Scrambled)
- 1/4 onion, yellow (diced)
- Green Bell Pepper, 1/4 cup (diced)
- Cheddar cheese, shredded (or cheese of choice)
- Milk (for the egg scramble)
- Sauce Picante (Optional)
On the Blackstone, how to make a cheesy breakfast burrito
Begin by sautéing the green peppers and onions while the ham heats up. As required, oil the green peppers and onion.
Combine all three once the green peppers and onion have been sautéed and the ham has been cooked. Place the Ingredients on the Blackstone and spread them out.
Scramble the eggs and place them on top of the green pepper, onions, and ham.
Scramble everything together on the Blackstone Griddle until the eggs are done, then remove them from the griddle.
Place the tortillas on a platter and cover them with a moist paper towel. To make the tortillas more pliable for rolling, microwave them for 10 seconds. Place a good quantity of cheese in the tortilla’s center.
Scramble your ham, green peppers, and onions. If you want to add a little fire, use picante sauce.
Fold the tortilla’s sides inward.
Roll the tortilla tightly.
Place aside.
Return the breakfast burritos to the Blackstone Griddle with the seam side down.
Give the breakfast burritos a brisk turn after a few minutes.
I brown the sides of my breakfast burritos as well.
Cut the burritos in half at a 45 degree angle after removing them from the Blackstone.
Serve immediately. Enjoy!

Instructions
- Green pepper, onion, and ham should all be diced.
- On the Blackstone, arrange the green pepper, onion, and ham. While the leftover ham is warming up, sauté the green pepper and onion.
- Combine all three ingredients and spread them out on the Blackstone after they’ve been cooked. Scramble the eggs with the combined eggs and milk on top. Turn off the heat.
- Microwave a couple Shells of Tortillas with a damp paper towel over them for 10 seconds.
- Scramble the eggs with the cheese and picante sauce (with the ham, peppers and onions).
- Fold the tortillas in half and roll them up.
- Return the burritos to the Blackstone, seam side down.
- After a few minutes, turn them over and brown the other side. Remove and cut in half at a 45° angle. Serve immediately.
