These Big Gree Egg Mesquite & Cow Lick Seasoned T-Bone Steaks are fairly quick and super easy to make. The key is getting a good 3/4-1″ thick steak and simply rotating and flipping every 1-2 minutes four times.

Ingredients

  • T-Bone Steak, thick cut (preferred 3/4 – 1′′ thick)
  • McCormick Mesquite
  • Dizzy Pig’s Cow Lick
  • Olive Oil Extra Virgin

How to Season the T-Bone Steaks With Mesquite & Cow Lick

Put a quarter size drop of Olive Oil Extra Virgin on the steaks and rub it in creating a thin coat across the top of the steak.

Spread a generous quantity of Mesquite on the steaks and softly press it in.

Apply a generous quantity of Dizzy Pig Cow Lick and massage it in. Repeat with the opposite side of the steaks.

How to Prepare T-Bone Steaks in the BGE

Turn on the Big Green Egg and let it scream with all of the vents open. Cooking temperature should be approximately 600-650 degrees (unless you are reverse searing them). Place the steaks on the grill and cook for 90 seconds with the lid closed.

Close the cover for additional 90 seconds after opening it and rotating the steaks a quarter turn to obtain a lovely diamond charbroil.

Close the cover for another 90 seconds after flipping the steaks. Rotate the steaks another quarter turn after opening the lid. Close both the bottom and top vents after shutting the lid this time to get a nice smoke flowing within the egg.

After two minutes, use a thermal pen to verify the inside temperature. Pull the steaks out as soon as they reach 145 degrees for a wonderful medium-rare steak.

On the platter, the steaks will continue to cook. Allow for 2 minutes of resting time, and you should have a nicely cooked juicy steak with a medium “doneness.”

Sauté Toppings (Optional)

  • 1/2 pound mushrooms, sliced
  • 1 onion, medium (sliced)
  • Butter, 2 tablespoons
  • 1 Tablespoon – Olive Oil Extra Virgin
  • Worcestershire sauce, 1 teaspoon
  • 2 Tablespoons – Red Wine of Choice

All of the ingredients should be combined and cooked on high until done.
