To obtain a proper 400 degree cook, open the bottom vent about 1/2 way and the top vent completely (tweak vents as needed). After the setting is complete, begin preparing the meal.

Begin by combining all of the ingredients and spices in a big mixing bowl or freezer bag. Cut the smoked sausage into 1/4-inch thick slices.


Cut the potatoes into 1/4-inch thick slices and place them in the bowl or freezer bag. If the potatoes aren’t around the same size as the smoked sausage, you’ll wind up with cooked meat and uncooked potatoes.


Slice the onion in half, then thinly slice it again before adding it to the bowl or freezer bag.


Because my green pepper was more than I required, I just used half of it and put the rest in the dish or freezer bag.


Pour one tablespoon of extra virgin olive oil over everything. Sprinkle 1/2 teaspoon of IPA over the top. Sprinkle the remaining 1/2 teaspoon of Bayou-ish over the top.


To get it all mixed up, use a big spoon or get your hands in it.


Toss it on a pizza pan (I use my pizza pan for a drip tray on a lot of cooks as well so I try to always cover it with foil).

The basic objective is to uniformly distribute the components and create a single layer.


Ascertain that the temperature remains constant at roughly 400 degrees.


Add the Roasted Smoked Sausage, Potatoes & Veggies to the pan and let it cook for 10 minutes.


Stir everything together after 10 minutes and continue to simmer for another 30 minutes, stirring every 10 minutes.

It will take a bit less time if they are smaller, and a little longer if they are bigger.

Plate the potatoes after they’ve reached the desired level of readiness.
