BGE Roasted Garlic Parmesan Chicken with Swamp Venom is a simple and tasty dish that can be served as a dinner, an appetizer, or on game day while watching your favorite sport. This dish is similar to the Buffalo Wild Wings version, which is also delicious.
BGE Roasted Garlic Parmesan Chicken W/ Cow Lick & Swamp Venom Ingredients
- Wings of chicken (Store was out so this was made with drums)
- 5 garlic cloves
- Oil of Olives
- Mayonnaise, 1/2 cup
- 2 Tablespoons Parmesan
- 1 teaspoon of corn syrup
- 1 tsp apple cider vinegar
- 1 tblsp lemon juice
Seasoning Mixture
- 1 tablespoon basil
- a quarter teaspoon of black pepper
- Oregano, 1/4 teaspoon
- Dizzy Pig’s Swamp Venom, 1/4 teaspoon
- Thyme, 1/4 teaspoon
- 1/4 teaspoon red pepper, crushed
Get the Big Green Egg ready.

This dish works best when cooked at a lower temperature to preserve the chicken juicy. Preheat the Big Green Egg at 275-300°F. The wings will be grilled on the grill directly.
How to Prepare BGE Roasted Garlic Parmesan Chicken W/ Cow Lick & Swamp Venom
Garlic, roasted
Preheat the oven to 425°F.
- Remove one end of the garlic bulb and throw it away.
- Place the garlic cloves on tin foil.
- Drizzle a little Extra Virgin Oil of Olives on the cut end
- Tin foil should be closed.
- Cook in the oven for about 25 minutes, or until the garlic is tender.
- Set aside 5 garlic cloves that have been peeled and chopped into tiny pieces.
Roasted Garlic Parmesan Chicken W/ Cow Lick & Swamp Venom Seasoning Mixture
Combine the following ingredients in a mixing bowl:
- 1 tablespoon basil
- a quarter teaspoon of black pepper
- Oregano, 1/4 teaspoon
- Dizzy Pig’s Swamp Venom, 1/4 teaspoon
- Thyme, 1/4 teaspoon
- 1/4 teaspoon red pepper, crushed
Discard the 1/8 teaspoon indicated in the photo since my 1/4 teaspoon was soiled in the dishwasher.
Combine the following ingredients in a Tupperware dish that can be sealed:
- 5 Garlic Cloves, Roasted (minced)
- Mayonnaise, 1/2 cup
- 2 Tablespoons Parmesan
- 1 teaspoon of corn syrup
- 1 tsp apple cider vinegar
- 1 tblsp lemon juice
Mix well then add the Seasoning Mixture.
Mix again, cover and put in the fridge for a minimum of 30 mins. The Roasted Garlic Parmesan Chicken W/ Cow Lick & Swamp Venom sauce is best after being in the fridge for two hours.
How to cook a chicken on the Big Green Egg
Remove the chicken from the box and prepare the Dizzy Pig Cow Lick seasoning.
Coat both sides of the drum / wing evenly.
Place the chicken on the Big Green Egg and pierce the thickest part with a probe.
Allow the chicken to cook to around 150 degrees before flipping to acquire some color on the other side. If you have little children, now is an excellent time to fire up the grill for some hot dogs.
Allow the chicken to cook until it reaches the USDA’s minimum temperature of 165 degrees.
Pull the chicken when they hit 170 degrees in which they are delicious as is but even better with the Roasted Garlic Parmesan W/ Cow Lick & Swamp Venom sauce.
Toss the chicken into the bow (you can do multiple at a time).
