BGE – Garlic Shrimp Scampi is a simple and fast dish to prepare. It’s cooked using white wine, which really brings out the garlic scampi sauce’s taste.
- Butter (four tablespoons)
- Extra Virgin Olive Oil, 4 Tablespoons
- 3 Tablespoons Garlic, minced
- 1/2 cup white wine of your choice
- Crushed Red Pepper Flakes, 1/4 teaspoon
- Black pepper, 1/4 teaspoon
Turn on the BGE.
The BGE – Garlic Shrimp Scampi is prepared over direct fire. Simply heat up the egg, place the grate on top, and set the temperature to roughly 500 degrees.
BGE – Garlic Shrimp Scampi Preparation
It is suggested that you use medium-sized shrimp for this recipe. If you live near the ocean, you may be able to obtain them fresh from the boat rather than frozen from the supermarket, like we do in Michigan.
If you’re using fresh shrimp, start by removing the veins. The digestive path of the shrimp is represented by the black vein on its back. With a paring knife and an incision along the rear of the shrimp, the vein may be readily removed.
This is normally done for you if you buy frozen shrimp. Pull the shell off and put it aside after it’s been removed.
In a bowl combine the garlic, white wine, crushed red pepper & black pepper.
Add the butter to the cast iron pan with the extra virgin olive oil.

Scampi with Garlic Shrimp Recipe
The BGE should now be set at about 500 degrees. Simply place the cast iron pan in the BGE after it has been prepared.
Simply allow it 30 to 60 seconds to liquefy.
Add the remaining spices & wine. Let this cook for about 5-6 minutes in which at this step you are simply trying to reduce the sauce about 40-50%.
After that, add the shrimp and simmer for another 2-3 minutes.
Cook for another 2-3 minutes, or until the shrimp are cooked through.
We normally carry the cast iron pan inside the house at this time and eat the shrimp straight from the pan. Enjoy!
