This Bayou-ish blackened seasoning, according to Dizzy Pig, is the perfect blend of fresh herbs, spices, peppercorns, and chiles. BGE – Blackened Mahi Mahi Mahi has just the right amount of spiciness.
I’ve used it as a seasoning on fish, shrimp, chicken, and burgers so far, and it’s never let me down. It’s a great spice to have on hand, and it’s fantastic on the BGE!

Ingredients
- Dizzy Pig’s Bayou-ish Blackening Seasoning
- Mahi Mahi Mahi Mahi (This recipe is also great on Tilapia, Grouper, Redfish, Snapper and even Catfish)
- Extra Virgin Olive Oil, 2 Tablespoons
- Butter, 2 tablespoons

Putting the BGE together
Start the BGE and set the temperature to about 400 degrees. This chef will use a cast iron pan and cook directly on the grate.
On the Big Green Egg, make Bayou-style Blackened Mahi Mahi Mahi
Season the Mahi Mahi Mahi on both sides liberally with Dizzy Pig’s Bayou-ish Blackening Season.
Prior to putting the skillet (cast iron) on the BGE add both the Extra Virgin Olive Oil and Butter. Then place the skillet (cast iron) on the BGE. This will prevent a chance of a flare up with the Olive Oil.
When the cast iron pan is hot and the butter has melted, add the Mahi Mahi Mahi and cook for approximately 2-3 minutes with the lid closed.
Simply turn the Mahi Mahi Mahi with a spatula and cook for another 2-3 minutes on the other side. When the timer goes off, use an instant-read thermometer to make sure the temperature is about 145 degrees.
According to the USDA, the minimum temperature for Mahi Mahi Mahi should be 145 degrees. If the temperature is lower, cook until it reaches the thickest part of the fish.
The BGE – Blackened Mahi Mahi Mahi is delicious with with rice and broccoli. Enjoy!
While using freshly caught Mahi Mahi Mahi is usually recommended, many people do not live near the water. Costco has a fantastic frozen fish aisle, which is where I acquire my.
Simply open the vacuum sealed package and place the Mahi Mahi Mahi on a platter wrapped in tin foil in the refrigerator overnight to defrost. This will ensure a superb cook the next day.
I also suggest purchasing Mahi Mahi Mahi without the skin. I would remove the skin if it came with it.

- Mahi Mahi Mahi
- Extra Virgin Olive Oil, 2 Tablespoons
- Butter, 2 tablespoons
Instructions
- Seasons all sides of the Mahi Mahi Mahi with the Blackened Bayou-ish Seasoning.
- Start the BGE and set the temperature to about 400 degrees (either indirect or direct heat will work).
- Place the cast iron pan on the BGE while it’s heating up so it’ll be ready to use when it’s done.
- In a pan, melt the butter and add the Extra Virgin Olive Oil.
- Once the butter has melted place the blackened Mahi Mahi Mahi in the skillet (cast iron) for about two minutes and then flip it. Let it cook for about another minute and begin to pay attention to the internal temp. Once it reaches 145 it is ready to pull and eat.
