How to setup the Big Green Egg for Bacon & Cheese Cream Wrapped Chicken?

Begin by lighting the Big Green Egg. Set the BGE to 400 degrees Fahrenheit, which will be used as an indirect cook (feet down on the plate setter).

How do you make chicken wrapped with bacon?


Start out by cutting any fat off of the Breast of chicken.


Put a decent amount of Shakin’ The Tree spice by Dizzy Pig on the Breast of chicken.


Layer the top of the Breast of chicken with a good coating of Cheese Cream.


Begin by cutting the bacon into 1/2 – 1 inch strips and leaving them on both sides of the chicken.


Simply tuck the bacon beneath the chicken breast and repeat on the other.


I didn’t feel like cleaning a cast iron pan for this phase, so I simply wrapped it in tin foil and sat it on my drip tray.


On top of the bacon, sprinkle a bit more Shakin’ the Tree spice.

On the Big Green Egg, how to make Bacon Wrapped Chicken


By now you should have the Big Green Egg Dialed in anywhere between 275 & 400 degrees.


Place the bacon-wrapped chicken on the grill and probe it.


Feed down the plate setter, grate on top, and finally the pan or cast iron skillet.


Allow the chicken to cook until it reaches 165 degrees on the inside. This is the bare minimum for cooking any chicken. However, the bacon is still uncooked.


Preheat oven to broil. Remove the chicken from the BGE and set it in the oven for 3 to 5 minutes, or until the bacon is crispy.
